Banana & Blueberry Loaf

Ok I’m the first to admit that you shouldn’t change something that is already amazeballs. And although i don’t think the addition of blueberries to delicious banana bread is as controversial as  these unexpected flavour combos.  But the addition of blueberries to this old favourite is making me one happy blogger!

I’m sure you have a family banana bread recipe, I know I do. This  is a new one for me and left me feeling guilt free without compromising on the taste. As per usual I do in depth recipe research, countless test banana breads… I read a bunch of recipes then just guestimate and make up my own recipe. It turned out tasty and almost as important for me….Photogenic!
I made a few healthier alterations to my recipe but to be honest banana bread should be simple. Put lots of bananas in and make sure they are brown and mushy! This will always leave you with a moist banana bread.

Perfect for a lazy Sunday morning curled up on the couch with your favourite book or food blog!

Banana & Blueberry Loaf

  • 3 Overripe Bananas (The browner the better!)
  • 100g Brown Sugar
  • 1/2 cup Natural Yoghurt
  • 2 Eggs
  • 1/4 Milk
  • 1 1/2 cup Wholemeal Self-Raising Flour
  • 3/4 cups Blueberries
  • Melted butter (To grease your pan)

Step 1
Preheat oven to 180°C. Brush a loaf pan with melted butter to lightly grease. Line base and 2 long sides with non-stick baking paper.
Step 2
Combine the banana, sugar, yoghurt, eggs, milk and in a large bowl.
Step 3
Sift over the combined flours. Add the husks from the sieve. Use a large metal spoon to fold the flour into the banana mixture until just combined. Add the blueberries and gently fold.
Step 4
Spoon the mixture into prepared pan and smooth the surface. Bake in oven for 1 hour or until a skewer inserted into the centre comes out clean. Remove from oven and set aside for 10 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.
